Aiming to create a well-rounded dining experience with different styles and flavors of food, The Federal Galley's eateries include:
WHICH CAME FIRST
Which Came First asks the age-old question of which came first, the chicken or the egg? Chef Phil Milton began his culinary journey as a small boy helping his mother and grandmother in the kitchen. Chef Milton later graduated from the Scottsdale Culinary Institute before enlisting in the U.S. Army. Today, he runs Which Came First. The restaurant is open for brunch, lunch, and dinner, and the menu embraces creativity. Offerings include Nutella-stuffed French toast, Nashville hot chicken, and customer-favorite fried chicken.
GUAPO
During his childhood, Chef George Adelo grew up in Nex Mexico helping his family run an old-time general store. He was responsible for preparing the daily specials for the lunch crowd. After moving to Pittsburgh, Adelo wanted to share his traditional New Mexican recipes with his new community and created Guapo. The menu includes refried beans burritos, stewed chicken quesadillas, and braised roast beef enchiladas.
SHAKA
Born in Vietnam, Chef Summer Le immigrated to the United States to pursue a career. She is both a chemist and microbiologist, though her passion lies in the culinary world. Her goal at Shaka is to offer Hawaiian-fusion cuisine. The restaurant's name refers to a hand gesture that Hawaiians use to casually greet their friends. Offerings include Kalua pulled pork noodle soup, tempura shrimp poke bowls, and egg rolls.
